Transforming bottled milk into ice cream cups
Sausage and frozen beef always attract customers to the chiller at the Kasetapirom Café. However, there is also a delicious product located beside them that customers often buy as well. Do you know what it is? It is available in a variety of flavors, including strawberry, rum raisin, blueberry yogurt, chocolate, vanilla chips, green tea, fresh milk and more. Yes, it is ice cream!
Our ice cream is made from goat's or cow's milk, which is easy to see from the stickers attached to each lid. Cow's milk ice cream is what we see more often in grocery or department stores, while goat's milk ice cream is definitely rarer. We are proud to offer this unique product as a delicious option at the Kasetapirom Café.
Many people associate goat's milk with a musty smell. However, when we talk about goat's milk without any odor, many people think of the Faculty of Agriculture at Kamphaeng Saen. This faculty has shown its expertise in this field and have also supported farmers in best practices for goat's milk production.
While the bad smell can be removed from goat's milk, there is still a disadvantage in using these animals. For four months a year, goats are mating or pregnant, so they do not produce milk. The faculty's challenge is to find a way to offer customers goat milk throughout the whole year. The easiest way to do this is by freezing, however goat's milk texture unfortunately change over time and loses its flavor. For this reason, the faculty is conducting research and studying goat milk processing. The flavored ice cream currently available at the café is one of the outputs coming from this successful research.
In addition to ice cream cups, the faculty has developed popsicles for children. They have great flavor and contain good nutrition necessary for their growth. The ends of the popsicles are even wrapped with banana string for an eco-friendly touch. Additional ice cream products will be released as research continues.
By combining quality raw materials and practical research, agricultural products can create a higher value and difference in the market. We have already seen examples of this from the ice cream cups at the Kasetapirom Café.
